Tequila is made from the blue agave plant, grown in the red volcanic soil surrounding the city of Tequila. More than 300 million plants are harvested each year. It was first produced by the Aztecs, near the location of the city of Tequila. It is now produced mostly in the western Mexican state of Jalisco, in the lowlands 56km to the west of the city of Guadalajara and Los Altos, and the highlands around the same distance to the northeast.The tequila that is popular today was first mass-produced in the early 1800's in Guadalajara, Mexico. The first tequila was made by Jose María Guadalupe de Cuervo in 1795.
